We do not cook it every day. It sits with the occasional dishes of the house, the ones announced from one day to the next, so a phone call before you set off is the surest thing.

The custom

The soup of the day after, following parties and weddings.

Potroace are poultry giblets: the neck, the back, the hearts and the gizzards. Simmered slowly and soured with sauerkraut juice, they make a gently sour soup, the kind brought to the table the next day, when the wedding is over and people gather again to talk.

It arrives hot, with sour cream, a warm bread roll and a hot pepper on the side, at the hour when nobody has patience for complicated food. On our menu it carries the name “Leacul lui Ion”, Ion’s Remedy.

Here it stays a dish for announced days rather than an everyday one. We cook it when the occasion calls for it, and then you will find it on the menu of that day.
